Arugula, Pomegranate, Pistachio & Goat Cheese Salad with Rose' Dressing

This amazing salad will be the thing you take to every holiday event you have left on your schedule this bustling season! This Arugula, Pomegranate, Pistachio and Goat Cheese Salad is so light and refreshing, you're going to fall in love! Just make sure you give me credit when your host loves you for bringing something healthy and inspiring to the party! ;)

The homemade Rose' dressing will save you in all the extra calories you can save for that dark chocolate dessert or that amazing Cranberry Martini you've been thinking about trying! Make sure to check out the tips below if you need some guidance on how to pick and seed a pomegranate!

Few tricks for this salad: If you want to save yourself a ton of time. Buy pomegranates that have already been seeded and even shelled pistachios. If you like to do all things yourself...when you pick your pomegranate it should be firm and bright red. Cut it in half and place in it a bowl full of water upside down. You can tap the back with a wooden spoon or you can pull it apart with your hands. The seeds will fall straight into the bowl and you'll avoid the inevitable splatter that will ruin your clothes. (Which yes I have done!)

Serves 4-5 people

Ingredients:

  • 1 small pomegranate
  • 3-4 C arugula
  • 1 C shelled pistachios
  • 3 Tbsp of your favorite goat cheese crumbled
  • Fresh ground pepper
  • 1 C Rose' wine
  • 3/4 C Extra virgin olive oil
  • 1/2 C Red wine vinegar
  • 1 tsp of water
  • 2 Tbsp herbs de provence (found in any grocery store)

Directions:

  1. In a bowl, add in arugula.
  2. Sprinkle pomegranate seeds and goat cheese. (So many cheeses to choose from, use your favorite!
  3. Top with pistachio.
  4. Flavor with fresh ground pepper.
  5. Add Rose' dressing to your liking.

For Rose' dressing:

  1. 1 C Rose' wine
  2. 2 Tbsp Herbs de Provence- (mixture of herbs you can find in any grocery store.)
  3. 3/4 C Extra Virgin Olive Oil (a good one will make all the difference in the taste.)
  4. 1/2 C Red wine vinegar
  5. 1 tsp water
  6. Season with Salt and Pepper.
  7. Place all items in a Mason/Ball jar. Make sure to put on lid on it and shake it really well.
